Preheat oven to 200 degrees celsius
Add 50 grams breadcrumbs, 1 tablespoon dried basil and 0.5 teaspoon ground black pepper to a medium-sized bowl
Grate 100 grams parmesan into the bowl with the breadcrumbs and mix with a fork until well combined
Peel 5 cloves fresh garlic and finely grate into an empty medium-sized bowl
Add 1 tablespoon olive oil to the garlic and mix until well combined
Grease baking tray with 0.5 tablespoon olive oil
Clean 300 grams chicken breast gently with cold water and pat the chicken dry with kitchen papers
Coat the chicken evenly with the garlic and oil marinade and then with the breadcrumb mix and place on the baking tray
Bake chicken in the pre-heated oven at 200 degrees celsius for 15 minutes
Add 5 grams mayonnaise, 0.5 teaspoon dijon mustard, 3 tablespoons sunflower oil, 2 tablespoons white wine vinegar and 1 tablespoon whole milk into an empty large bowl
Season the sauce with 1 pinch of salt and 1 pinch of ground black pepper and mix until well combined
Wash 1 cucumber and cut it into thin wheels of around 2mm thickness
Add cucumber slices to the bowl with the dressing, toss the salad and serve with the chicken
