Carrots can easily be kept for a week or more in the vegetable drawer of the fridge. Remove the packaging (plastic bags, etc.) before you put them into the fridge. If you want to keep them extra fresh, wrap them in a moist towel.
Foodsave tip
You can refresh soft and limp carrots by soaking them in a bowl of cold water for a few hours before eating them. This restores the lost humidity in the carrots, which makes them crisp again.

Instructions
Peel 2 carrots and 2 sweet potatoes and cut them all into cubes of around 2 cm |
Peel 1 fresh onion and cut it finely |
Wash 1 spring onion and cut it into slices of about 0.5 cm |
Peel 0.5 celeriac and cut it into cubes of around 1 cm |
Add 2 tablespoons olive oil to a large saucepan and heat up over medium heat until the oil is hot |
Add the onion and spring onion to the saucepan and sauté them for about 3 minutes while stirring occasionally |
Add the carrots, celeriac, sweet potatoes and 200 grams red lentils and sauté them for about 3 minutes |
Prepare 1 litre vegetable stock according to instructions on the packaging |
Add the stock and 3 teaspoons mild curry to the saucepan, stir well and simmer the curry for about 10 minutes |
