Instructions
Add water to a large saucepan and bring it to the boil over high heat |
Add 150 grams Braunwalder egg pasta and 1 tablespoon salt to the boiling water and cook the pasta for 10 minutes (or according to package instructions) |
Wash 150 grams mache |
Wash 50 grams celery and 50 grams scallions and cut them into thin slices |
Cut 75 grams Appenzeller cheese classic into cubes of around 0.5 cm |
Cut 50 grams Appenzeller Mostbröckli into thin strips |
Drain the Braunwalder egg pasta with a colander, rinse them with cold water and set them aside |
Add 2 tablespoons rapeseed oil, 1.5 tablespoons white wine vinegar and 0.25 tablespoon dijon mustard to a large bowl and mix them well |
Peel, core and cut 1 apple into cubes of around 0.5 cm |
Add the apple, scallions, mache, celery, cheese, Mostbröckli and pasta to the bowl and toss the salad well |
Serve the Appenzeller Pasta Mache Salad in plates |
