Wash 4 scallions, 20 grams parsley, 10 grams fresh mint and 10 grams basil
Add the scallions, parsley, mint, basil, 3 tablespoons white wine vinegar, 2 tablespoons honey and 5 tablespoons Ólixir® extra virgin olive oil into a blender and blend until the paste is smooth
Transfer the green paste to a small bowl and season it with 0.5 teaspoon salt and 0.5 teaspoon ground black pepper
Wash 150 grams cucumbers, cut the cucumbers in half lengthwise and slice each half into semi-circles of about 0.5 cm thickness
Add water to a large saucepan and bring to the boil over high heat
Add 170 grams linguini and 2 tablespoons salt to the boiling water and cook the pasta for 8 minutes (or according to package instructions)
Drain the linguini with a colander, rinse them with cold water, drain again and set them aside to cool down
Wash 240 grams chicken breast and season the chicken with 0.25 teaspoon salt and 0.25 teaspoon ground black pepper
Add 1 tablespoon sunflower oil to a medium-sized frying pan and heat up over medium heat until the sunflower oil is hot
Add the chicken to the frying pan and fry it for about 4 minutes on one side until it is lightly browned
Flip the chicken and fry it for about 4 more minutes on the other side until it is lightly browned
Remove the chicken from the heat and let it rest for about 2 minutes
Wash 2 scallions and cut them into slices of about 0.5 cm width
Cut the chicken into slices of 1 cm
Arrange the noodles on the plates and top them with the cucumbers, chicken, scallions and green sauce
