Add water to a large saucepan and bring it to the boil over high heat
Add 150 grams Braunwalder egg pasta and 1 tablespoon salt to the boiling water and cook the pasta for 10 minutes (or according to package instructions)
Wash 150 grams mache
Wash 50 grams celery and 50 grams scallions and cut them into thin slices
Cut 75 grams Appenzeller cheese classic into cubes of around 0.5 cm
Cut 50 grams Appenzeller Mostbröckli into thin strips
Drain the Braunwalder egg pasta with a colander, rinse them with cold water and set them aside
Add 2 tablespoons rapeseed oil, 1.5 tablespoons white wine vinegar and 0.25 tablespoon dijon mustard to a large bowl and mix them well
Peel, core and cut 1 apple into cubes of around 0.5 cm
Add the apple, scallions, mache, celery, cheese, Mostbröckli and pasta to the bowl and toss the salad well
