Instructions
Preheat oven to 200 degrees celsius |
Add 50 grams breadcrumbs, 1 tablespoon dried basil and 0.5 teaspoon ground black pepper to a medium-sized bowl |
Grate 100 grams parmesan into the bowl with the breadcrumbs and mix with a fork until well combined |
Peel 5 cloves fresh garlic and finely grate into an empty medium-sized bowl |
Add 1 tablespoon olive oil to the garlic and mix until well combined |
Grease baking tray with 0.5 tablespoon olive oil |
Clean 300 grams chicken breast gently with cold water and pat the chicken dry with kitchen papers |
Coat the chicken evenly with the garlic and oil marinade and then with the breadcrumb mix and place on the baking tray |
Bake chicken in the pre-heated oven at 200 degrees celsius for 15 minutes |
Add 5 grams mayonnaise, 0.5 teaspoon dijon mustard, 3 tablespoons sunflower oil, 2 tablespoons white wine vinegar and 1 tablespoon whole milk into an empty large bowl |
Season the sauce with 1 pinch of salt and 1 pinch of ground black pepper and mix until well combined |
Wash 1 cucumber and cut it into thin wheels of around 2mm thickness |
Add cucumber slices to the bowl with the dressing, toss the salad and serve with the chicken |
