Instructions
Wash 4 scallions, 20 grams parsley, 10 grams fresh mint and 10 grams basil |
Add the scallions, parsley, mint, basil, 3 tablespoons white wine vinegar, 2 tablespoons honey and 5 tablespoons olive oil into a blender and blend until the paste is smooth |
Transfer the green paste to a small bowl and season it with 0.5 teaspoon salt and 0.5 teaspoon ground black pepper |
Wash 150 grams cucumbers, cut the cucumbers in half lengthwise and slice each half into semi-circles of about 0.5 cm thickness |
Add water to a large saucepan and bring to the boil over high heat |
Add 170 grams linguini and 2 tablespoons salt to the boiling water and cook the pasta for 8 minutes (or according to package instructions) |
Drain the linguini with a colander, rinse them with cold water, drain again and set them aside to cool down |
Wash 240 grams chicken breast and season the chicken with 0.25 teaspoon salt and 0.25 teaspoon ground black pepper |
Add 1 tablespoon olive oil to a medium-sized frying pan and heat up over medium heat until the oil is hot |
Add the chicken to the frying pan and fry it for about 4 minutes on one side until it is lightly browned |
Flip the chicken and fry it for about 4 more minutes on the other side until it is lightly browned |
Remove the chicken from the heat and let it rest for about 2 minutes |
Wash 2 scallions and cut them into slices of about 0.5 cm width |
Cut the chicken into slices of 1 cm |
Arrange the noodles on the plates and top them with the cucumbers, chicken, scallions and green sauce |
