Instructions
Peel 2 cloves fresh garlic and 2 centimetres fresh ginger and chop both roughly |
Cut 1 red chili into halves lengthwise, remove seeds with a knife point and roughly chop the chili |
Wash 1 stalk lemongrass, cut off the bottom and smash it (with a glas or a rolling pin) |
Peel 500 grams sweet potatoes and chop into pieces of around 3cm |
Wash 20 grams fresh coriander, separate leaves from the stems, set the leaves aside and chop the stems |
Add 1 teaspoon olive oil to a large saucepan and heat-up on medium heat until hot |
Add chopped garlic, chili and ginger to the saucepan |
Add smashed lemongrass, chopped coriander stems and 2 tablespoons red curry paste to the saucepan |
Cook spices on lowest heat for 2.5 minutes |
Prepare 750 millilitres chicken stock according to instructions on packaging |
Add the stock, 160 millilitres coconut milk and the chopped sweet potato to the saucepan and cook the soup on medium heat for 15 minutes |
Cut 300 grams chicken breast into slices of 0.5 centimeter thickness |
Remove the lemongrass from the soup with a spoon |
Transfer the soup into the blender and blend until smooth |
Pour the soup back to the saucepan |
Add chicken to the saucepan and cook the soup on medium heat for 10 minutes |
Chop the coriander leaves |
Squeeze out 1 lime into the soup and stir in 1 teaspoon granulated sugar and 0.5 tablespoon fish sauce |
Scatter the coriander leaves across the sweeet potato soup and serve immediately |
