Peel 2 cloves fresh garlic and 2 centimetres fresh ginger and chop both roughly
Cut 1 red chili into halves lengthwise, remove seeds with a knife point and roughly chop the chili
Wash 1 stalk lemongrass, cut off the bottom and smash it (with a glas or a rolling pin)
Peel 500 grams sweet potatoes and chop into pieces of around 3cm
Wash 20 grams fresh coriander, separate leaves from the stems, set the leaves aside and chop the stems
Add 1 teaspoon olive oil to a large saucepan and heat-up on medium heat until hot
Add chopped garlic, chili and ginger to the saucepan
Add smashed lemongrass, chopped coriander stems and 2 tablespoons red curry paste to the saucepan
Cook spices on lowest heat for 2.5 minutes
Prepare 750 millilitres chicken stock according to instructions on packaging
Add the stock, 160 millilitres coconut milk and the chopped sweet potato to the saucepan and cook the soup on medium heat for 15 minutes
Cut 300 grams chicken breast into slices of 0.5 centimeter thickness
Remove the lemongrass from the soup with a spoon
Transfer the soup into the blender and blend until smooth
Pour the soup back to the saucepan
Add chicken to the saucepan and cook the soup on medium heat for 10 minutes
Chop the coriander leaves
Squeeze out 1 lime into the soup and stir in 1 teaspoon granulated sugar and 0.5 tablespoon fish sauce
Scatter the coriander leaves across the sweeet potato soup and serve immediately

Add the stock, 160 millilitres coconut milk and the chopped sweet potato to the saucepan and cook the soup on medium heat for 15 minutes
Cut 300 grams chicken breast into slices of 0.5 centimeter thickness
Remove the lemongrass from the soup with a spoon
Transfer the soup into the blender and blend until smooth
Pour the soup back to the saucepan
Add chicken to the saucepan and cook the soup on medium heat for 10 minutes
Chop the coriander leaves
Squeeze out 1 lime into the soup and stir in 1 teaspoon granulated sugar and 0.5 tablespoon fish sauce
Scatter the coriander leaves across the sweeet potato soup and serve immediately
