Lentils are among the oldest cultivated plants in the world and were the first pulses grown by humans, starting during a similar epoch as the cultivation of wheat and barley. They originate in Southwest Asia and are today still extensively grown in the Middle East.
As do other pulses, they contain a high amount of protein and a good portion of calcium, vitamin A and vitamin B. Therefore, they are often used in vegetarian dishes. Some exciting examples can be found in our collection of lentils' recipes.
